Sausage Poutine Fries

Ingredients

1 tablespoon canola oil
½ cup diced kielbasa or other smoked sausage
¼ cup diced red and green bell peppers
¼ cup diced white onion
1 cup beef-flavored gravy
4 cups cooked French fries
1 cup cheese curds
1 tablespoon chopped fresh parsley, for garnish

Preparation

1. Heat the canola oil in a medium pan over medium-high heat. When the oil is shimmering, add the kielbasa and cook for 3 minutes, until the edges start to crisp. Add the bell peppers and onion, then sauté for 5–7 minutes or until kielbasa is crispy and the peppers and onion are tender.

2. Add the gravy to a small saucepan and warm over medium-high heat for 3–5 minutes, or until simmering. Cover to keep warm.

3. Distribute half the fries between 2 serving bowls and top each with ¼ cup cheese curds, ¼ of the kielbasa mixture, and ¼ cup hot gravy. Repeat to make another layer. Garnish with the parsley.

4. Serve warm.

5 tablespoons unsalted butter
2 tablespoons chopped garlic
¼ teaspoon kosher salt
3 tablespoons chopped fresh parsley, plus more for garnish
4 cups cooked French fries
4 ounces tomato ketchup

Preparation

1. Melt the butter in a small saucepan over medium-high heat. Add the garlic and salt and cook for 3–5 minutes, until the garlic just starts to turn golden. Remove the pan from the heat and stir in the parsley.

2. Add the French fries to a medium bowl. Pour the garlic butter over the fries and toss to coat.

3. Divide the French fries between 2 serving bowls and garnish with more parsley. Serve with ketchup alongside.

5 ounces yellow prepared cheese
4 cups cooked French fries

1. In a small saucepan, combine the water and yellow prepared cheese. Cook over medium-high heat, stirring frequently, until melted and smooth, about 5 minutes.

2. Add the French fries to a medium bowl and sprinkle with the Old Bay seasoning. Toss until well coated.

3. Divide the fries between 2 serving bowls and serve with the cheese sauce alongside.
