Cranberry Meatballs

Makes 20 meatballs

Ingredients

2½ cups cranberries, fresh or frozen
½ cup orange juice
2 tablespoons orange zest, divided
¼ teaspoon cinnamon
⅛–¼ teaspoon cayenne, to taste
¼ teaspoon kosher salt
½ cup ketchup
½ tablespoon lemon juice
20 medium frozen meatballs, prepared according to package instructions

Preparation

1. In a medium saucepan, combine the cranberries, orange juice, and 1½ tablespoons orange zest and bring to a simmer over medium heat. Cook for 10 minutes, until the cranberries have broken down and the liquid has reduced to make a thick sauce. Add the cinnamon, cayenne, salt, ketchup and lemon juice, and stir to combine. Cook for another minute to meld the flavors, then remove the pot from the heat.

2. Toss the meatballs with the sauce. Garnish with remaining ½ tablespoon orange zest, then serve.

Smoky Barbecue Meatballs

Makes 20 meatballs

Ingredients

3 tablespoons olive oil
2 large garlic cloves, minced
1 cup ketchup
¼ cup water
¼ cup apple cider vinegar
¼ cup brown sugar
2 teaspoons smoked paprika
½ teaspoon chili powder
¼–½ teaspoon cayenne pepper, to taste
20 medium frozen meatballs, prepared according to package instructions
1 green onion, chopped

Preparation

1. Heat the olive oil in a medium saucepan over medium heat. Add the garlic and cook for 2 minutes, until soft and fragrant.

2. Add the ketchup, water, apple cider vinegar, brown sugar, paprika, chili powder, and cayenne, and whisk until well combined. Bring to a simmer and cook, stirring occasionally, for 10 minutes or until the sauce thickens.

3. Toss the meatballs with enough sauce to coat, then garnish with the green onion. Serve with any remaining sauce alongside for dipping.

Firecracker Honey Garlic Meatballs

Makes 20 meatballs

Ingredients

¼ cup orange juice
2 tablespoons lime juice
3 tablespoons honey
2 teaspoons sriracha, plus more to taste
1 teaspoon grated ginger
2 large garlic cloves, minced
3 tablespoons soy sauce
½ teaspoon white vinegar
1 teaspoon sesame oil
20 medium frozen meatballs, prepared according to package instructions
1 tablespoon cornstarch
1 tablespoon chopped fresh cilantro
½ tablespoon sesame seeds

Preparation

1. In a medium bowl, whisk together the orange juice, lime juice, honey, sriracha, ginger, garlic, soy sauce, vinegar, and sesame oil until well combined.

2. Heat a large, high-walled skillet over medium heat. Add the sauce and bring to a simmer. Cook, stirring occasionally for 2–3 minutes, or until garlic and ginger are softened and fragrant.

3. In a large bowl, toss the cooked meatballs with the cornstarch until evenly coated.

4. Transfer the meatballs to the skillet with the sauce and gently toss to coat. Cook, stirring continuously, for 2 minutes, or until the sauce thickens to coat the meatballs.

5. Garnish with the cilantro and sesame seeds.
