Preheat The Grill

Spice Rubs 3 Ways in 15 Minutes or Less
2 tablespoons finely ground coffee beans
2 tablespoons dark brown sugar
1 tablespoon ground paprika
2 tablespoons chili powder
1 tablespoon chipotle powder
1½ teaspoons ground coriander
1½ teaspoons mustard powder
½ teaspoon ground ginger
1½ teaspoons freshly ground black pepper
1 tablespoon kosher salt
2 16-ounce bone-in New York strip steaks
2 tablespoons grapeseed oil
Flaky sea salt, for garnish
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, combine the ground coffee, brown sugar, paprika, chili powder, chipotle powder, coriander, mustard powder, ginger, black pepper and salt.
3. Rub the spice mixture all over the steaks.
4. Heat the grapeseed oil in a 12-inch cast-iron skillet over medium-high heat until shimmering. Sear the steaks on both sides until brown and crispy, 2–3 minutes per side.
5. Transfer the skillet to the oven and cook for 7–9 minutes, or until the internal temperature reaches 130°F for medium-rare, or your desired temperature.
6. Garnish the steaks with flaky salt and serve immediately.
Sweet and Smoky-Rubbed Chicken Wings
¼ cup water
2 tablespoons brown sugar
1 tablespoon maple syrup
1 teaspoon red pepper flakes
2 tablespoons cornstarch
1 tablespoon smoked paprika
1 tablespoon chili powder
1½ tablespoons chipotle powder
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground cinnamon
1 tablespoon kosher salt
1 pound chicken flats and drumettes
2 tablespoons olive oil
1. Preheat the air fryer to 400°F (200°C).
2. In a small saucepan, combine the water, brown sugar, maple syrup, and red pepper flakes. Bring to a boil over medium heat and cook for 2 minutes, then reduce the heat to medium-low heat and simmer for another 2 minutes, or until the consistency of loose syrup. Remove the pot from the heat.
3. In a small bowl, combine the cornstarch, paprika, chili powder, chipotle powder, black pepper, garlic powder, onion powder, cinnamon, and salt.
4. In a large bowl, toss the chicken flats and drumettes with the olive oil until fully coated. Sprinkle the spice rub over the chicken and toss until well coated.
5. Working in batches, air-fry the chicken wings for 6 minutes. Brush the syrup over the wings, then flip and brush the syrup over the other side. Continue cooking for another 6 minutes, or until crispy.
6. Serve the wings immediately.
Garlic Pepper-Rubbed Shrimp
6 tablespoons salted butter, melted
1 tablespoon garlic powder
1 tablespoon freshly ground black pepper
1 teaspoon kosher salt
½ teaspoon ground paprika
½ teaspoon onion powder
½ teaspoon dried parsley
1 pound jumbo shrimp, peeled and deveined, tails left on
1. In a medium bowl, combine the melted butter, garlic powder, black pepper, salt, paprika, onion powder, and dried parsley.
2. Add the shrimp to the garlic pepper rub and toss to coat evenly.
3. Heat a medium skillet over medium heat. Working in batches, cook the shrimp for about 2 minutes per side, or until light pink and cooked through.
4. Serve immediately.
